Microorganisms are found everywhere on earth and in humans as well as animals. In all the water, in the air we breathe and in the food we eat. Microorganisms are necessary for all life, the establishment of microorganisms in and on the body starts already as a newborn. Lactic acid bacteria are a form of living microorganisms.  

Natural in food before

Live lactic acid bacteria are found naturally in the gastrointestinal tract and in acidified /fermented food such as sauerkraut, sour strömming, but also in yogurt and in honey. In ancient Greece and the Roman Empire, fermented milk was recommended for children, and in 76 BC the Roman historian Pliny recommended the intake of fermented milk products in the treatment of gastrointestinal infections.

Fermenting/lactic acid fermentation is one of the world's oldest ways of preserving food. Calculations have shown that during the Stone Age the daily intake of lactic acid bacteria was up to half a million times as great as today.

However, it would take until 1904 before Prof. Elie Metchnikoff succeeded in isolating the first lactic acid bacteria from Bulgarian yogurt, and thus the research on different probiotic bacterial cultures and their impact on humans was initiated. Probiotics are today referred to as lactic acid bacteria.

1904 – Prof. Elie Metchnikoff isolates Lactobacillus bulgaricus from Bulgarian yogurt.

1923 - Henri Boulardii isolates a variant of Saccharomyces cerevisiae from litchi in Vietnam.

1965 - Stillwell/Lilly introduces the word probiotic as a "substance or organism that contributes to intestinal balance".

2001 - FAO/WHO establishes a definition for probiotics: "Live microorganisms which, when ingested in sufficient quantities, produce positive health effects in the host".  

2010 - The European Food Authority EFSA prohibits the use of the word probiotics as it is considered that the word itself contains health claims. The word probiotics is therefore now referred to as lactic acid bacteria.
